Black Porcini

The Black Porcini is a large variety whose cap can reach up to 25cm in diameter. Its flesh is very firm, and its aroma is reminiscent of undergrowth and moss. As its name suggests, the cap's color is dark, almost black. The Black Porcini grows mainly in broadleaf woods, such as oak and chestnut, and prefers sandy soils. It is more common in Mediterranean regions but can also be found in other areas.

Common Porcini

The common porcini is undoubtedly the best-known and most appreciated variety. Its name comes from the Latin "edulis," which means "edible." The cap of the common porcini can reach up to 30cm in diameter and is a yellowish-brown color, of varying darkness. The common porcini grows in broadleaf forests and heathlands from late summer to autumn.

Summer Porcini

The Summer Porcini is a medium-to-small variety, with a cap that typically ranges from 4 to 10cm in diameter.

It is hazelnut-colored, lighter than the common porcini, and its cuticle often cracks due to heat and sun exposure. The stem of the Summer Porcini is fleshy, thickens towards the base, and is firmly rooted in the soil. It grows from late spring to late summer.

Pine Porcini

(boletus pinophilus)

The Pine Porcini is so named because it usually grows under pine trees, although it can also be found in other settings. Its cap can reach up to 20cm in diameter and is covered by a wrinkled cuticle that becomes quite slimy and moist over time. The part under the cap, called the hymenophore, is white at first, then turns yellow, and finally dark green. The Pine Porcini grows mainly in coniferous and broadleaf forests, in hilly and mountainous areas. It is one of the first varieties to appear in the woods and can be harvested until October or even November.
